      <image:caption>Gingernut Thinking was initially a fun little idea that started in my London kitchen the night of my daughter’s 18th birthday. Two friends were helping me feed 18 of her closest friends, each with a personal meal request. And of course my younger son was teasing her for getting old. But I digress. I knew I wanted to change things up a bit professionally but I wasn’t sure what that looked like. Thanks to their encouragement, this crazy idea began to take shape and eventually, like my mum’s famous chicken soup, a bunch of random ingredients started to slowly blend together. Alas, it wasn’t until a few years later after returning to the states that Gingernut Thinking truly came to life. The stars had aligned and I was ready to embrace change.  It’s been a great ride so far.</image:caption>
